These are the Michelin places I've tried and written about. So far they're all Bib Gourmand picks; I'll add starred restaurants when I get to them. Each one shows the latest year it was listed, and places that have since dropped off keep the last year they made it.

Hsiung Chi Scallion Pancake (雄記蔥抓餅)

A scallion pancake stall next to Shuiyuan Market. Get the signature with corn (NT$65), add the free basil, and ask for both sauces. Soft and chewy. My rating: 4.5.
Wang's Broth (小王煮瓜)

On Huaxi Street since 1975. The braised pork rice looked promising, but I found it salty and a bit heavy, and the tofu and duck egg hadn't absorbed much flavor. I skipped the soup because it was a hot afternoon, so this rating leaves it out. My rating: 3.5.

Braised pork buns by the university gate in Gongguan, a stall I've been eating at since college. You pick how fatty you want the pork, in five steps from lean to fatty. I usually get a mixed filling on the leaner side, plus a bowl of four-herb soup with intestine and tripe. My rating: 4.
