I've walked past Hsiung Chi for years and almost never bought one. It's a scallion pancake stall next to Shuiyuan Market, inside Gongguan Night Market in Taipei. It has won both a Michelin Bib Gourmand and a 500 Bowls Award. It hit the local news, the line got longer, and I finally joined the crowd.

To be honest, this style of pancake isn't really my thing, though I don't dislike it. I grew up in southern Taiwan, and the one I miss is a different pancake: fried in oil until the edges crisp, then topped with a runny egg and the shop's own sweet chili sauce.
The line
On the day I went, the stall didn't open until 4 pm, and the line already looked like this. I've never seen a queue like this around Shuiyuan Market.

I hate waiting in line, but I stuck it out. Halfway through, the auntie who runs the stall came out to tell us why it was taking so long: the people ahead had ordered a lot. Nice of her to let us know. After what felt like forever, it was my turn.

What to order
I went with the signature, which comes with egg and cheese (NT$60), and added corn for NT$65 total. The menu board has English too. They call it an "Onion Pancake." Or you can just point at 招牌 (signature) or 招牌+玉米 (with corn). Basil is free, and it'd be a crime not to add it.

The pancake is soft and chewy, with a light, bready aroma, and the cheese melts into the sweet corn and egg. It comes off the griddle hot enough to burn your tongue, so be careful. It's a thick one, but I polished it off in no time on the bus.

There are two sauces on the board: honey mustard, and a chili sauce they make in-house. Get both. For the chili, mild is enough; it has a slow-building kick.
It's a lot better than the scallion pancake stall near Yongkang Park, and I'll be back. Skipping it all these years was a big mistake.
